Gluten Free Cake Batter Protein Bar

I love making protein bars, it's kind of an obsession of mine (shhh!! don't tell anyone). So, I found a similar recipe online but converted it into a gluten free protein packed version. It is super simple to make and I love having protein bars on hand in the freezer. They are easy to prepare ahead of time, slice up and wrap in wax paper. They are great for the kids to grab in a hurry since we are always on the go!!
















2    cups brown rice krispies
1/3 cup quinoa flour
2/3 cup vanilla protein powder
2    tsp vanilla extract
1/2 tsp sea salt
3/8  cup cashew butter (softened)
1/2  cup agave
2    Tbs. confetti sprinkles (optional)

Combine all dry ingredients and stir well. Combine wet ingredients in a large bowl. Pour dry ingredients into wet. Mix well. Pour in two 5" X 7" glass containers. Tear off some wax paper and place on top of bars and press down as hard as you can. Put in freezer for a couple of hours before cutting into bars. Wrap the bars up individually in wax paper and place in a Zip type plastic bag. Store in freezer.

Homemade Almond Milk

This is one of my favorite recipes for alternative to MOO JUICE ! Of course it's not going to be as quick as running to the store and buying a carton of mass produced almond milk , but I guarantee you'll be able to pronounce all of the ingredients !!!!












Homemade Almond Milk

1 cup of raw almonds
vanilla extract (to taste or optional)
cinnamon (to taste or optional)
7 cups of water
stevia (to taste or optional)

Soak almonds in water overnight. Almonds will have doubled in size. Drain water. Add almonds to the 7 cups of water in a high speed blender. Blend until milk is smooth. Pour through cheese cloth or a nut bag to catch any residual almond skin. Mix in optional flavorings and refrigerate. Use within a few days.

Banana Bread Smoothie

Ok, so we can't eat wheat or gluten, so banana bread is not usually on the menu at our house. Sooo, we decided to make a smoothie that tastes like banana bread.














Banana Bread Smoothie Recipe

1 ripe banana

1 scoop vanilla protein powder
2 tsp cinnamon
1 tsp vanilla extract
1 cup ice
1 cup milk of choice (I use almond milk)

Add all ingredients to your trusty Vitamix and blend....
